Prepare at home, enjoy at work

Was "I will eat more home cooked meals" one of the things on your holiday resolutions list? When you are working, chances are that you do not have much time for cooking, resulting in ordering take-out for lunch or eating something along the way, from the bakery. Sounds familiar?

We don't have to list here the benefits of home cooked meals. In addition to saving money, cooking on your own lets you decide exactly which ingredients you should use. And still, somehow, the advantages of home cooked food aside, it is really hard to get used to cooking on your own and bringing the food to work. So here is our suggestion - start with something simple, such as the recipe we are proposing today and share it with your colleagues. Turn your lunch break into something even more productive and playful.  

To solve your "What should I have for lunch today at work" dilemma in advance, we have found this recipe for savory muffins with zucchini, pancetta and cheddar cheese. 

Ingredients

2 1/2 cups of flour

1/2 teaspoon of baking soda or baking powder

1/4 teaspoon of black pepper

3 eggs

1 teaspoon of lemon juice

2 teaspoons of Dijon mustard

2 teaspoons of oil (your pick)

2 cups of grated zucchini

1/4 cup of chopped pancetta

1/3 cup of grated cheddar cheese + additional cheese to sprinkle on top

How to make

Preheat the oven to 175°C and place muffin liners into your muffin tin. Over medium heat, heat the oil with the pan and fry the pancetta until crisp. Put the pancetta on a paper towel to soak up the excess grease.

Stir the flour, pepper, baking soda and lemon juice. Make sure to add lemon juice directly into the baking soda in order to create a reaction – fizz and bubbles. Then add eggs, Dijon mustard and oil. If it’s more to your liking feel free to replace the oil with butter.

Use the mixer to get a compact batter, but make sure not to overmix. Add the grated zucchini, previously squeezed from the excess water, pancetta and cheddar cheese. Mix until all the ingredients are evenly distributed.

Fill each muffin liner to the top and gently press with your fingers to align the batter. Bake in the oven for about 20 minutes. When a fine golden crust appears on top of the muffins, take them out of the oven and sprinkle with grated cheese and crumbled Prima Peanuts sticks for extra crunchiness. For the cheese on top to melt, return the muffins into the oven for another two minutes.
