Lovely spring brunch

Close your eyes and think about an ideal spring day. If we had to guess, we would say you are probably somewhere in nature, the sun is shining and everything around you is vibrating. But, before that, you are enjoying tasteful brunch full of fresh ingredients and in the company of people you love… Does that sound about right?

Often, we forget that it’s the small things that count, such as spring temperatures and a couple of hours of free time. This reason exactly is why we wish to encourage you to spend the following weekend with friends in nature! Naturally, before you leave your house to actually spend the day in nature, make sure your body has enough energy.

If you are a morning person, visiting a local market for fresh ingredients will be worth your time. Shopping at markets can be a real delight and another energy-filling ritual. During spring months markets offer especially wide range of ingredients with stands that are popping with colors and freshness. 

Once you have picked up your greens, it’s time for brunch! Today, we suggest a real spring treat – recipe that is easy to make, light and bursting with vitamins.

Ingredients

  • Arugula
  • Fresh chives
  • Parsley
  • Eggs
  • Red pepper grains
  • Toast bread
  • Cream cheese
  • Lemon juice
  • Apple cider vinegar
  • Prima Classic sticks

How to make

For starters, make a spread for toast – as finely as possible chop fresh chives and parsley and mix them with cream cheese. Add a few drops of lemon juice for freshness and season with salt and grinded red pepper grains.

Moving on, proceed with toasting and poaching. Evenly toast both sides of the bread in a toaster. Simultaneously, bring a pot of water to boil, and once it does add a pinch of Apple cider vinegar in it. Use a spoon to stir the water, creating a swirling vortex in which you should crack an egg.

While the egg is cooking for 2 to 3 minutes, put the cream cheese spread on toast, and decorate with arugula leaves for additional freshness.  

Slowly remove the egg from the water, place it on the toast, sprinkle salt and pepper to taste. For additional crispiness, crunch your favorite Prima Classic sticks on top of it all and get lost in the abundance of layers and tastes! 

That’s all! Our simple brunch recipe can be enriched with proteins – for example, smoked salmon will be a perfect addition to fresh greens and cream cheese spread. Of course, this is optional. Feel free to choose your own ingredients.
